WHere is a home-style take on a cocktail from our latest menu. This is a party-sized prepared mix that's loaded with the essence of the Christmas time, making it ideal for a celebration. Reserve the remaining citrus syrup for morning drinks, desserts, or to make additional servings of this cocktail.
The Bikini Cocktail
Serves 10 guests
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Combine the listed components into a pot, heat until it reaches a gentle boil, agitating so the sugar melts. Next, remove from the stove and let it to reach room temperature entirely. Decant into a clean bottle, cap it and store in the fridge, it will last for up to four weeks.
For the Batch Mix: Pour the specified liquid ingredients into a big jug, let it rest for one hour, then filter it best through cheesecloth, so it's fully clarified.
For serving: Measure 85ml of the cocktail base into a cocktail shaker filled with ice, gently stirring gently for a minute until cold. Filter into a chilled martini glass or equivalent, decorate with a few cranberries and finish with a quick spritz of the essential oil over the drink.
